I think the cook did not cook the crab well. Most of the time when you cook a crab with low fire or low temperature, the heat is not enough so the result can be like this.
Lousy cook! To get down to the answer to the problem with the snow crab legs sticking to some legs, we may agree with the answer as being "over cooked. Being in North Carolina, we suspect the answer is "yes. Perhaps "steaming the crab legs" using your pickling spice in the steamy water will help? We suggest this as "if" they have already been processed boiled and cleaned there is no reason to reboil the crab legs. You very well could be over cooking them.
Steaming already boiled and cleaned legs is the way to go after they have been processed and previously frozen. Steaming the crab legs doesn't continue to cook them, it merely reheats the crab legs and keeps them hot till ready to crack!
Perhaps experiment with this method and come back and let us know how it faired! Why does crab meat sometimes stick to the shell? I have had this happen in the past and I am wondering why? I would like to get it out of the shell in whole pieces. Are the reasons, too high of heat, or cooking the crabs too long or not long enough?
Sorry for all of my crab posts lately, but I ran into a big problem I decided to portion my crabs before transport and freeze them for the trip home. The freezing worked perfectly, they didn't thaw at any point and we boiled half of them up for 15 mins in a pot of water at a rolling boil, all of the crab meat stuck to the shell. Don't know what went wrong, anyone have ideas? Key points: Crabs were killed and portioned so they did not die and the meat didn't go bad from the enzymes beforehand Crabs were frozen solid and never thawed during trip home Crabs were cooked from raw Crabs were cooked 15 mins in one batch and tried another for a 10 min batch.

His buddy cleaned and split his crabs then boiled for min let them cool and froze them. We throw the frozen partially cooked crab into boiling water for 10 minutes. Never had any stick in the shell.
